3/4 cup of leftover roast beef (or BBQ beef)
2 Tablespoons of lemon juice
2 Tablespoons of onion, minced
1 and ½ cups of sour cream
1 clove of garlic, minced
2 teaspoons of Dijon mustard
Salt and Pepper to taste
5 ripe slicing tomatoes (like Beefsteak)


  1. In a large bowl, combine all the ingredients except for the tomatoes.
  2. Stir to blend the flavors.
  3. Slice and arrange the tomatoes either on a platter or on individual plates.
  4. Spoon the beef mixture atop the tomatoes.

Serve with crackers and cheese wedges.

Yield: 4 to 6 servings
